*DING* Here's a hack for making the creamiest soup using a whole block of feta cheese. I start with frozen butter nut squash, season with thyme, salt, and crushed red pepper. Then I place the feta in the middle of the squash, and roast it with a whole head of garlic. When it's done roasting, I just transfer everything to a blender, but only use half the bulb of garlic *click*, and some vegetable broth. While it's blending, I use the rest of the
roasted garlic to spread on some pita for toasting and dipping. This is such a satisfying, cozy,
creamy, meal that I'm so obsessed with. So good!.
