Try drying your own tomatoes. Simply cut them into 1/2 half inch slices, or cut lengthwise for Romas. Place them cut-side up on a rack that you use for cooling, and add a little salt. Put a cookie sheet underneath the cooling rack and then set the pair in an oven heated to 190 degrees. Leave for as many as ten hours. Store in plastic bags in the freezer. For flavored olive oil add some dried tomatoes and fresh herbs in a good quality extra virgin olive oil and store out of direct sunlight. This will be good for up to two weeks, and should be refrigerated during that time.

Prepare some of your food the night before if you cannot handle doing everything in one night. Cut up veggies and make the sauce the night before going to bed at night. You will be much less stressed and a bit more ready to cook when you wake up.

Store your herbs and spices in a dark and cool place so that their flavors are preserved. The quality and freshness of spices and herbs will diminish when locked in warm areas.
