Keep herbs and spices in a location that is cool and dark. Exposure to humidity, light and heat all affect the flavor of your spices. Most spices will retain their flavor for about a year. Spices that are whole will retain flavor longer, closer to 3-5 years. As long as they are stored properly, they will hold onto their flavor for several years.

Spices should be kept somewhere cool and dark place. Your culinary preparations will taste better if your spices are fresher.

Always have your spices stored in a dark and cool place. If the spices become too hot, or moist from humidity, it can shorten their shelf life. Too much light exposure also does this. When spices are stored in an adequately dark and cool area, they tend to retain their taste and shelf life for greater periods of time. Meals prepared with fresher spices are simply more delicious.

Slicing meat into thin even strips is easier when the meat is frozen. This works especially well for the meat slicing styles typically used with Asian cuisine. However, you must allow the sliced meat time to thaw out before the cooking process, for even cooking.

When adding oil to cooking food, pour it on the sides of the pan. This way, it will already be heated by the time it reaches the food. This will optimize the flavors in your food in your final dish.

Apples are very popular in cooking in fall and winter, but they will spoil if not properly stored. To properly store them, store apples in open-mesh bags or baskets in a cool basement or in the produce drawer of your refrigerator. One rotten apple will quickly ruin the bunch so keep a close eye on them while stored.

If you want to reduce the amount of calories and fat in a mashed potato dish, substitute cauliflower for some of the potatoes. Since cauliflower is bland, it will mix right in with the potatoes along with the other ingredients. Cauliflower mixes easily with potatoes and will become hard to notice while reducing your intake of carbs.

Plan on preparing a large batch so that the excess can freeze and store it. Good homemade chicken stock is a wonderful base in soups, stews, stews and other dishes.

Are you preparing a dish with fresh basil? Fill an empty glass with fresh basil. Pour water into the glass so that the stems are covered with water. Place it on your kitchen counter to keep it fresh for weeks! The basil may even start growing roots if you change out the water regularly.
